We are five producers, farmers and cheesemakers.

We raise animals for milk and cheese, we collect hazelnuts and chestnuts, we sow the earth for vegetables and fruit, we tame bees, we make preserves, beers, creams, flours, fruit juices, tume, biscuits...

We have in common the province of Cuneo and the passion to do things "properly".  Between us, only 70Km.

 

We are the COMPA and all together, you can find us in Barolo!

A FILIERA MADE WITH HEART

tranquilla e silenziosa, è situata la nostra azienda. Qui il tempo sembra essersi fermato. Come cent'anni fa, noi utilizziamo soltanto il latte denso e pannoso delle nostre mucche, selezionate fra le migliori e nutrite con l'erba buona di queste zone, fresca e incontaminata d'estate, mutata in fieno odoroso d'inverno.

Ed è proprio quella fragranza inconfondibile che rende la mungitura così ricca e il prodotto tanto buono, particolarmente indicato all'arte casearia.

Appena sotto uno dei crinali principali delle Langhe, a cavallo tra valle Belbo e Tanaro, Cascina Raflazz domina dai suoi 770m la valle del rio

Bovina, le frazioni sparse di Paroldo e la cerchia delle Alpi Liguri all’orizzonte. 

Tutto intorno si estendono i pascoli recintati per le pecore, campi di cereali, prati e boschi, dove si inoltrano invitanti stradelli sterrati.

La famiglia Adami vive a Cascina Raflazz da secoli, e da sempre produce formaggio di qualità. L’allevamento di pecore della Langa consiste di circa 300 capi di cui si occupano Claudio e Anna. Nel caseificio aziendale si producono dagli anni ’80 il Murazzano DOP, la “Tuma di pecora delle Langhe” e altri formaggi da latte crudo.

LA BOTTERA

Here time seems to have stopped. As a hundred years ago, we use only the thick and pannose milk of our cows, selected among the best and fed with the good grass of these areas, fresh and uncontaminated in summer, changed into fragrant hay in winter. And it is precisely that unmistakable fragrance that makes milking so rich and the product so good, particularly suitable for the art of cheese-making.

Just below one of the main ridges of the Langhe, straddling the Belbo and Tanaro valleys, Cascina Raflazz dominates from its 770m the valley of the Rio Bovina, the scattered

 

hamlets of Paroldo and the Ligurian Alps on the horizon. All around, there are fenced-in sheep pastures, cereal fields, meadows and woods, where inviting dirt roads lead to the valley.

The Adami family has lived in Cascina Raflazz for centuries and has always produced quality cheese. The breeding of sheep in the Langa consists of about 300 heads of which Claudio and Anna take care of. The farm's dairy has been producing Murazzano DOP, "Tuma di pecora delle Langhe" and other raw milk cheeses since the 1980s.

The love for the land, for the raw material and our dedication to cultivate our lands has been handed down for three generations,

from grandfather Oreste and grandmother Fiorentina, passing from father Roberto and mother Giuliana, until the young Ilaria. The first hazelnuts, planted by our ancestors more than two centuries ago, did not always support our family's economy but, later on, the visceral love for my land pushed me to make these crops its reason for living.

Our values, our renunciations and efforts, our continuous dedication are only a small part of an ambitious project, such as that of carrying on a work started 100 years ago, with decision and passion, aware of the fact that, inside every hazelnut, lives a part of our land, a part of all of us.

The coop. agr. TERRANUOVA was born in the territory of Cuneo, from the idea of three friends who feel the need to offer the consumer healthy and genuine food. 

This project does not consist of anything striking, on the contrary, its real strength lies in its simplicity, a simplicity that is brought back to consumers' tables thanks to the natural and genuine flavours and aromas of milk and cheese. The fresh milk collected every day at the Riberi & Martini farm in Ronchi is transported to the cooperative's dairy so that it can be processed and, in a short time, transformed into yoghurt, dairy products, stracchino...

The future, however, is weighed down by the unknown possibility that members and workers of foreign origin may remain in Italy; if they cannot do so, the fox and blueberry would cease to exist, 19 jobs would be lost, collaboration with local transformation companies, the positive transformation of the landscape that brings with it greater hydrogeological safety, more tourism, more wealth and a better quality of life.
